Going Vegetarian This Week

I have found that choosing to prepare vegetarian meals is a great way to save money, as good quality healthy meats can be quite pricey, and (at least in my area) vegetables are always very affordable. My family actually likes to do one week a month where we eliminate meat from our diets entirely, choosing to prepare only vegetarian dishes. We do this not only for the cost saving effects but also because we are aware that meat production is harmful for to the environment. We try to buy local as much as possible, and just love to visit the farmer’s market on the weekend.
Some people may think that there aren’t many tasty vegetarian dishes, but in reality there is a huge variety and many are easy to prepare. Some of my family’s favorite veggie dishes are Mediterranean pasta with olive oil, roasted red pepper fajitas and quesadillas. All of these dishes are very easy to make and taste delicious! So, if you’re looking to save some money and eat healthy, you may want to try a vegetarian week yourself.
