My Favourite Seafood Recipe - Baked Salmon

Every summer we have the privilege to pick up some fresh salmon practically right off the boat from a local fisherman. We fillet and cook some, give a few away to friends and family, and freeze the rest. Not only is the salmon delicious, but we get to help the environment by eating locally caught food, as well as help support a small business.
So what’s my preferred thing to do with this fish? I bake it, baby. The recipe I use is simple, quick, and oh so good, I have to share.
First, the cast:
1 1/2 pounds salmon fillets
1 tbs rock salt
1/3 cup soy sauce
1/3 cup brown sugar
Sounds easy already, doesn’t it?
Preheat your oven to 350, and while doing so evenly coat the fish with soy sauce, after which, sprinkle on the brown sugar, and finish with rock salt. Lightly rub in the ingredients, and place the fish on a tinfoil covered pan (the tinfoil is important for easy clean up later). Bake for 15 - 20 minutes, and enjoy!
This dish is so good it makes we want to enter a cook off, perhaps the Great American Seafood Cook off! I am pretty excited for this event because of the positiveness of domestic seafood sustainability. Food is just so much better when the source is known, it is local and fresh.

Off to the woods!

I have been suffering from a little bit of depression over the last day or two, and if there’s one way I know to solve that it’s… Prozac! Just kidding, the answer for me is exercise, and being in the great outdoors, so today the boyfriend and I are going to hit the trails! I feel happier just thinking about it. I really wonder if those on antidepressants couldn’t be better served with some sweat, but I’m no doctor, so I’ll just focus on Fergie, and get my butt in motion.
A big bottle of water, and off I go! I encourage you all to make sure you get your daily dose of heart-pumping exercise today, it really does work wonders.
